Mugi miso barley unpasteurized organicMugi miso is made from organic soybeans and barley. This miso is a perfect mix of all five flavors: salty, sweet, bitter, sour, and umami. Mugi miso is handcrafted and ferments for a minimum of 12 months in 100-year-old cedar barrels. This time is necessary to deepen the flavor and add healthy properties. The result is an authentically tasting Japanese seasoning that lies in flavor between hatcho and shiro miso. Mugi miso is great for making miso soup, but it also works well with noodle, vegetable, and tofu dishes. Mugi miso has an average strong flavor and is slightly saltier than genmai miso.
